Gluten Free White wine and onion zucchini fettuccine

Gluten Free White Wine and Onion Zucchini Fettuccine
Serves (2)
Ingredients & their amounts:
Half an onion (Chopped)
1 green zucchini
1/2 tbsp of minced garlic
Extra virgin olive oil
Salt & Pepper
1/2 a cup of white wine (Riesling is what I use)
1/2 a handful of fettuccine noodles
1. Start a pot for boiling the fettuccine noodles
2. Once the water is boiling add the noodles
3. Cook until your desired firmness
4. While the noodles cook, wash off your onion and green zucchini
5. Chop half of the onion into desired size pieces
6. To start, put the stove on low heat to prevent hot oil from popping out
7. Pour about 3 tbsp of the olive oil into a saute pan
8. Saute the onions while peeling long strips of zucchini into the pan using a potato peeler
9. Add a dash of salt and pepper
10. Raise to medium heat
11. Stir while adding the white wine
12. Add 1 more tbsp of olive oil to the sauce pan and stir for a minute
13. Reduce heat to low and let simmer for about 2 more minutes
14. Strain the noodles but do not wash them
15. Add the noodles to the pan and cook for about another minute
16. Serve with fresh grated Parmesan cheese and enjoy! =)
Notes:
I felt like I had too much olive oil when I made this the first time. As I wrote the recipe I took that into account but if you feel that there is too much olive oil for your taste then you can always reduce the amount!
This dish goes great on Gluten Free toast ;)

I'm going Gluten Free

My sister Amy thought it would be great to see me using my old blog again. I've been posting a lot of my cooking photos and other photos on Facebook but she thought it would be neat for me to use this as a tool for other Celiacs to see my recipies!
